What is yeast extract?
Yeast extract is a product obtained from yeast. Yeast is a microorganism that converts sugar into alcohol and carbon dioxide. This process is also called fermentation and is used, for example, in the production of bread or beer. Yeast extract is produced when the yeast is separated and crushed after fermentation. This breaks open the cell walls and releases the ingredients. These are then filtered, concentrated and dried.
Yeast extract has an intense salty and spicy flavor. It is often used as a seasoning or spread. It contains a lot of protein, vitamins (especially B vitamins) and minerals. It is also rich in glutamic acid, an amino acid that acts as a flavor enhancer.
